If you are wondering about the equivalent measurements between using dehydrated mango slices instead of fresh mango: Most recipes say fresh mangos can be 8-12 oz, and that 1 cup chopped mango is approx 165grams - which is equal to an approx ¾ cup of pulp. It also depends a lot on how the mangoes are dehydrated. You can use 1 cup of chopped dehydrated mango for 1 fresh mango, although due to the dehydration, you’re actually getting a lot more than just one mango in 1 cup of dehydrated slices!

Dehydrated Mango slices can be rehydrated and prepared for any dish you’d ordinarily use fresh mangos for. To rehydrate, spread slices in a shallow pan and cover with the same amount of clean water. Soak for at least 30 minutes. If you are making a sweet dessert, you can reconstitute in fruit juice to reduce the sugar in your recipe. Here are some ideas - the possibilities are endless!

  • Serve thin mango slices atop cereals, porridge, pancake, and crepes.
  • Use as a savoury vegetable cubed and braised with onions and spices over rice, or as a tasty chutney
  • Mix slices or cubes in a fruit salad or in a lettuce salad with vegetables like avocado, tomato, and cucumber
  • Use to flavor yogurt, ice cream, and sorbets
  • Make into coulis and compotes (combines with papaya and pineapple in compotes!)

Here's how to make: Mango Salsa

  • 1 medium-size fresh mango or 3/4 cup (approx 100 grams) chopped dehydrated mango
  • ¼ cup (40 grams) of finely chopped capsicum, tomato, and apple
  • 1 small finely chopped red onion
  • 2 Tbsp chopped coriander leaves
  • 1 fresh jalapeno/green chili finely chopped
  • 1 Tbsp lime juice
  • 1 Tbsp lemon juice
  • 1 tsp fresh ground ginger (optional)

First, rehydrate mango slices by covering them with water in a shallow pan for at least 30 mins. Then cut capsicum and tomato into small squares. Toss together with the mango and onion, coriander, and chili. Mix the mango water with lime and lemon juice for the dressing; add salt to taste, and drizzle over the salad. Delicious served with corn chips!
